As future pharmacists concerned about our patients’ health, we often fall into the trap of neglecting our own.
Recipe Corner is your reminder that being in pharmacy school and not nourishing yourself do not have to be mutually exclusive.
Check out this recipe for date-nut bars by one of our very own: Estelle Setton, Pharm.D. Candidate of 2028.
Ingredients:
12 pitted medjool dates- for a great dose of fiber!
1 1/4 cup of peanuts, walnuts, and almonds combined- for a great dose of antioxidants!
1/2 cup of oats- for reducing LDL cholesterol
3/4 cup of chocolate chips- to improve brain function
1 tsp vanilla extract
Pinch of salt
Instructions:
-Soak your pitted dates in hot water to soften them, then drain after 15 minutes.
-Add all ingredients to a food processor and blend until desired texture.
-Add a tablespoon of water if mixture is dry.
-Once blended, spread mixture on a pan to create one single layer.
-Freeze to harden; once frozen, cut into squares and store in the fridge/freezer!
